Safer food better business (SFBB)

SFBB (Safer Food Better Business) is a HACCP (Hazard Analysis and Critical Control Points) based food safety management system developed by the Food Standard Agency to help catering businesses to

  • comply with food hygiene regulations
  • demonstrate track record of food safety and staff training
  • protect your business’s reputation
  • improve your business and your food hygiene rating score

It is not a legal requirement for catering businesses to use the SFBB pack, but each business must have a relevant HACCP based food safety management system to demonstrate that procedures and system are in place and all records are kept up to date.

There are 6 sections in the SFBB pack (which you can download from the FSA website)

  • cross-contamination
  • cleaning
  • chilling
  • cooking
  • management
  • diary

When using the pack, each business must ensure that

  • all of the relevant Safe Methods, the cleaning schedule and other records have been filled in correctly and kept up-to-date
  • all staffs have been trained to follow the Safe Methods
  • the daily check diary and 4-weekly review are filled in and signed
  • the pack is kept at the premises in good and clean condition, and available for inspection

Failure to keep all records up to date on the food safety management system is a common reason for food businesses to be awarded with lower hygiene ratings.
