Staff training
All staffs should know the procedures and policies when asked to provide allergen information. Each member of staff must be given adequate, accurate and up-to-date trainings on handling allergy information and know the risks of allergen cross-contamination when handling and preparing foods, as well as working in and around food preparation areas.
There should be at least one member of staff trained on how to deal with emergency medical situations should someone suffers from allergic reaction. But no staff should actually carry out any medical treatment.
Food businesses should keep record of all staff trainings and arrange refresh courses in due time.
